One Pot Marry Me Beef

You’ve heard of Marry Me Chicken ? This is the beefy version - think ground beef and fluffy rice in a creamy, herby sauce that’s laced with parmesan cheese and chewy-sweet sun-dried tomatoes! Made in one pot and ready in under 30 minutes! 

INGREDIENTS

  • 450g ground minced beef

  • 2-3 cloves garlic, minced, or 1 teaspoon dried minced garlic

  • 1 teaspoon Italian seasoning

  • 1 teaspoon crushed Chilli Flakes, or more/less to taste

  • Salt and freshly ground black pepper

  • 400ml beef broth or stock 

  • 60-70g chopped, oil-packed sun-dried tomatoes, drained before chopping

  • 250g long grain white rice or enough for 4 people ( 50 - 75g per person depending on appetite!)

  • 60ml double cream

  • 3 tablespoons grated parmesan cheese, preferably freshly grated, plus more for serving

  • Chopped fresh basil for serving

Method (Serves 4)

  1. Brown the beef in a large skillet over medium-high heat, breaking up the meat as it cooks.

  2. Add the garlic, Italian seasoning, chilli flakes, 1/2 teaspoon salt, and 1/4 teaspoon black pepper and stir to coat. Cook for 1 minute, until the herbs are fragrant. 

  3. Add the sun-dried tomatoes and rice and stir to combine. Cook for 30 seconds to toast the rice. 

  4. Add the broth/stock and bring to a simmer, scraping up any browned bits from the bottom of the pan and incorporating them into the broth.

  5. Reduce the heat to low, cover and simmer for 20 minutes, until the liquid is absorbed and the rice is tender, stirring every 5 minutes. (add more stock if you think it needs it)  

  6. Stir in the cream and parmesan cheese. Season to taste with salt and black pepper.

  7. Garnish with fresh basil and serve with extra parmesan cheese on the side. Serve with a side of crisp green salad, or broccoli, spinach, kale, asparagus, green beans, peas - anything green !
